Any veggies (I used green onions (chopped), green peppers (chopped), and cabbage (chopped))
4 eggs

Grease a small baking dish.  Add all veggies (chopped).  Carefully crack four eggs on top of veggies.  Add salt and pepper to taste.  Bake @ 350 for 35 minutes.  Note that the top of the eggs will glaze over while baking.  As such, I find it easier to eat if I flip the final product over, putting the veggies on top.
