1 3/4 cup walnut meal (I put 1 3/4 cups walnuts in blender until fine)
3/4 cup cocoa powder
1 1/2 tsp baking powder
1 1/2 tsp baking soda
1/2 tsp salt
2 eggs
1 cup coconut milk (comes in a can in specialty foods area of store)
1/2 cup honey or maple syrup
2 tsp vanilla
1/3 cup coconut oil (melted) (found in baking area of store)
1/4 cup walnuts for topping (optional)
Preheat oven to 350°F; Butter a 9X13 pan; Mix dry ingredients until well blended, set aside; Whisk egg, add coconut milk, honey or maple syrup, coconut oil and whisk until completely blended.  Add wet mixture to dry and whisk well; Pour into prepared pan; top with chopped walnuts if desired; Bake 35-40 minutes.  Cool completely before cutting.
I didn’t have walnuts once, so I used pecans and they turned out the same.
